Aji Amarillo Chili Pepper
Peru is home to the Yellow Aji Amarillo chili pepper where it is grown. Even though it is named “Amarillo” which means yellow, it is actually orange by the time it reaches maturity. It ranks at 50,000 Scoville Heat Units which means it is a relatively hot pepper for most people. The pepper grows to be between 3 and 5 inches long and has a deep, rich flavor. This is the most popular pepper used in the Peruvian cuisine. And it’s been a part of their culinary culture for thousands of years.
Uses of the Aji Amarillo Pepper
The Yellow Aji Amarillo adds a lot of flavors as well as some heat to dishes. It is very tasty when eaten fresh if a person can handle a little bit of heat. This chili is most often dried, made into mash or canned. The mash is used in a variety of recipes.
